This was so so good! It felt indulgent and filling yet was light, fresh and packed full of nutrients. I sprinkled mine with some fresh parmesan but leaving with out it is vegan and gluten free. To make lightly fry strips of fresh zucchini in some good quality olive oil. Then simply stir through some of my 'simple herb pesto'. So easy but so good - a definite must try! Zucchini's are a great source of vitamin A and vitamin C, as well as potassium, which is an important electrolyte in helping reduce blood pressure and heart rate by counteracting the effects of sodium. They are great for people trying to loose weight because of their high water content yet significant amounts of dietary fibre.
