It is super exciting to see all the summertime fruits starting to make an appearance at the markets and I am planning on making the most of it. On a nice little walk to the market this morning I picked up some delicious peaches (...and maybe a sneaky croissant as well) for breakfast this morning. When I got back I realised one of the peaches had a bit of a bruise so I thought I would whip up a smoothie (I love that you can use fruit with slight imperfections in smoothies).
- 1 fresh ripe peach, chopped into rough pieces
- 1 cup frozen raspberries
- 2 tsp acai powder
- 1 1/4 cup unsweetened almond milk or coconut water
- Chop up the peach
- Put all the ingredients in a blender and blend until smooth
- Pour into a glass and enjoy!
Smoothies are such a versatile snack or light meal, which are especially refreshing and nourishing during the warmer months. Another idea for summer is to make this smoothie and then pour into popsicle moulds and store into the freezer for a healthy alternative to sugary ice-creams.
