Crumble is one of my all-time favourite desserts and by recreating it with nutritious ingredients it can make a really filling, luxurious and nourishing way to start the day. I whipped this up in a couple of minutes before university so it's definitely not a time-consuming breakfast and I think it would also be a winner to make for a group of friends of family for a lazy brunch. You can also increase the protein levels by adding a spoonful of greek yoghurt, which also functions as a healthy alternative to a scoop of ice-cream.
Ingredients -
- 1 1/2 cups frozen mixed berries
- 1/3 cup rolled oats
- 1/4 cup coconut
- 2 heaped tbs almond meal
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp group cardamon
- 1/4 tsp ground cloves
- 2 tsp rice malt syrup
- 2 tsp coconut oil, melted
Method -
- Preheat the oven to 180 degrees Celsius.
- In a oven proof bowl or baking dish add the frozen mixed berries
- In a small mixing bowl combine all the dry ingredients and spices and stir to combine
- Add coconut oil and rice malt syrup and mix until well combined.
- Add crumble mixture on top of the berries and bake in the oven for about 10-15 minutes or until the top starts to turn golden brown.
- Take out of the oven, top with some greek yoghurt and devour as a super scrumptious breakfast/brunch.
I love switching up recipes and breakfast is one of my absolute favourite meals to experiment with. The oats in this provide long-lasting, good-quality carbohydrate that will give you energy to get through to lunchtime. The berries are naturally sweet but lower in fructose than other fruits...as well as super delicious. The gingerbread-inspired spices I used also create a really sweet and dessert-like flavour but without adding any sugars.
