These pancakes were really delicious - moist, light and fluffy, and as they were flourless I didn't find myself feeling at all bloated afterwards. I whipped up a single serve for myself by mixing one egg, 120g of ricotta, 1 tsp vanilla essence, finely grated rind of half an orange and 1 tbs of coconut flour. I then topped with fresh raspberries, natural yoghurt, chia seeds and a drizzle of honey. In terms of overall fat content ricotta cheese is low, yet it is high in omega 3 fatty acids. These omega 3's are beneficial to the heart and blood vessel as evidence suggests they may help lower blood pressure and triglycerides, as well as reducing inflammation around the body. It is also a rich source of selenium, zinc and protein.
