I'm crazy busy working at the moment so I haven't had any time to do much cooking...but I thought I'd share this simply lunch or dinner idea that I had a while ago. This kind of food is one of my all time favourites and its so simple to whip up and super nourishing. If you have time earlier in the day cut chicken breast into large chunks and marinade in olive oil, balsamic vinegar, minced garlic and salt & pepper. Leave this in the fridge until your ready to cook and then grill. Also prepare a simple green salad to have on the side. Chop up zucchini, capsicum, onion, potato and sweet potato. Lightly loss these vegetables in olive oil and salt & pepper and roast in a 200 degree Celsius oven for approximately 25-30 minutes. Put it all together and your done! It's also great to make extra and then create hearty salads from the leftovers. In terms of macro- and micronutrients this is a great tasty and balanced meal. Chicken breast is great source of lean and low-fat protein. It is also rich in tryptophan, which is converted into serotonin to act as a mood enhancer. The vegetables in both the salad and the roast vegetables are a great source of fibre and vitamins & minerals. The olive oil in the chicken marinade and on the roast vegetables has also been shown to be associated with reduced chronic disease development and increased in life expectancy.
