These are simply a slight variation on the coconut easter bunnies I made a few weeks ago. I used homemade coconut butter and its incredible how easy it is to make and so much cheaper than buying the store bought varieties. To make you simply blend or process a packet of desiccated coconut until it forms a smooth, buttery consistently. It will be quicker in a blender but if using a food processor it will take 10 minutes or so. If you are really struggling to get the buttery consistency try adding a small amount of melted coconut oil.
- 3/4 cup coconut butter
- 3 tbs raw cacao powder
- About 5 drops peppermint oil
- 2 tbs rice malt syrup
- Simply combine all the ingredients in a bowl and mix until well combined
- Divide into small moulds
- Place in the freezer to set. They can then be kept in the fridge for a number of weeks.
Coconut butter is not only delicious but is packed with healthy fats, which will keep you feeling fuller for longer. It is also rich in lauric acid, which increases immunity and fights off harmful bacteria, fuguses and viruses. It also contains calcium, magnesium and essential amino acids.
