I whipped this up for lunch today and it was a hearty and delicious meal. Grilled haloumi is one of my favourites and the sweetness of the pomegranate seeds cut through the saltiness and complemented really well. I also added some avocado and baby spinach leaves. To make I simply removed the seeds from a pomegranate, combined about half of these with half a chopped avocado and 2 cups baby spinach. I then chopped some 1 cm thick slices of haloumi cheese and grilled for a minute and a half on each side. Grilled haloumi should be eaten straight away before it becomes too rubbery.
Haloumi is great eaten in moderation as it is very high in protein and lower in fat than other cheeses. Also, not only are pomegranate seeds delicious but they are high in vitamins, high in fibre, low in calories, and high in phytochemicals. These phytochemicals may aid in preventing cancer and promoting heart health.
