This is such an easy and delicious treat to whip up. Its makes a great dessert, snack and because its healthy you can even get away with having it for breakfast. To make I simply blended together 1 cup mixed frozen berries and 2 large frozen mango halves. Then add just a small amount of coconut water until you reach a consistency that is able to be blended but still thick and creamy. I then topped with some fresh chopped mango and strawberry and sprinkled with some desiccated coconut. Yum! Mangoes are rich in vitamins, minerals, poly-phenolic flavanoid antioxidants and dietary fibre. Research has suggested that the poly-phenolic antioxidants present may play a role in protecting against breast and colon cancers.
