I make these pizzas quite often...they are so delicious for dinner and then make great leftovers for lunch the next day. Rather than making my own pizza dough I generally use pita breads or whole-grain wraps for the bases - not only is it quicker and easier but they are thin and hence not a wheat dough overload. You can pick and choose ingredients to your preference but for these pizzas I topped with tomato paste, salami on some and ham on others, steamed sweet potato, baby spinach, mushrooms, red capsicum, red onion and a small amount of grated cheese. I also added some oregano, pepper and chilli flakes. Sweet potato is a great source of vitamin C, which as well as aiding the immune system also produces collagen and helps maintain the skins elasticity. Sweet potato also contains vitamin D, iron, potassium and magnesium. Also, sweet potatoes are great because they contain sugars that are slowly released into the bloodstream, helping to maintain stable blood sugar levels.
