This was such a yummy smoothie. To make I combined 1 cup frozen blueberries, 4 heaped tbs natural yoghurt, 1 tbs coconut oil, 1 scoop vegan protein powder and 1/2 cup lactose-free milk. I then topped with coconut, pecans, almonds, goji berries and honey. Although coconut oil is primarily made up of saturated fats, rather than normal long-chain fatty-acid chains coconut oil is made up of medium chain triglycerides, which are metabolized differently. They go straight from the liver to the digestive tract. Some studies have shown that coconut oil can increase the lipid content of the skin and improve moisture. It can also be protective against hair damage.
