I'm a bit out of action at the moment after having a minor surgery yesterday but I thought I would post about this very light lunch I had a few days ago after a massive breakfast. This is so simple, quick and easy. I fried two eggs in some olive oil (but coconut oil or butter could also be used). I also very lightly fried some zucchini and broccoli in a pan with some garlic, salt & pepper and chilli flakes. By only frying the vegetables slightly I find it gives a nicer flavour but also conserves the levels of vitamins and minerals.
Chilli is great for digestion, relief from migraines and joint pain and fighting sinus congestion as it contains a huge quantity of vitamin C. Chilli is also considered to aid in weight loss by boosting metabolism. On top of this chilli also serves as a good source of folic acid, potassium, beta-carotene, and vitamins A and C.
