I think porridge is a great way to kick start the day. It's warm and delicious and keeps you feeling full and energised. To make this porridge I combined 1/3 cups oats with approximately 3/4 cup unsweetened vanilla almond milk in a small saucepan. When it starts to bubble add 1/2 cup frozen or fresh raspberries and 1 tsp vanilla bean paste. Stir until cooked to the consistency you desire. I then topped my porridge with fresh blueberries, cranberries and pistachios.
Vanilla bean paste contains small amounts of B vitamins, including riboflavin, niacin, and vitamin B6, which aid in functioning of the nervous system, enzyme synthesis and regulation of body metabolism. Vanilla also contains small amounts of potassium, calcium, magnesium, iron, zinc and manganese.
