Reece's peanut butter cups are a bit of a weakness of mine so I thought I would try and replicate a more nutritious version. First lay out either 12 small patty pans or silicon cup cake moulds. To make the raw chocolate, blend or process together the following:
- 1-2 tbs melted coconut oil
- 4-5 tbs honey (which can be substituted for 100% maple syrup or rice syrup)
- Pinch of sea salt
- Pinch of cinnamon
- Pinch of cayenne pepper
- 1/3 cup cacao powder
Spoon small amounts of the raw chocolate into the moulds. You should have used up about half of the mixture in the bottom. Then spoon a small dollop of 100% peanut peanut butter on top, making sure it doesn't touch the edges. Then cover with the rest of the chocolate. Place in the fridge to cool and keep these in the fridge.
Peanut butter is a great source of protein, which aids in satiety but also in repairing and building muscle. It is also an excellent source of potassium, which reverses some of the damaging effects sodium can have on the body. Although high in fat, peanut butter contains more "healthy" unsaturated fats than saturated. It is a rich source of fibre, which aids in keeping you fuller for longer.
