To start use a good quality blender or a food processor to combine 1/3 cup desiccated coconut, 1/3 cup cashews, 1 pinch of salt, a few drops peppermint oil, 1-2 tbs melted coconut oil and 2-3 tbs honey (or alternatively agave, rice syrup or maple syrup). Shape mixture into about 12 patties and then place in the freezer. To make the raw chocolate coating combine the following ingredients in a blender - 1/3 cup cacao powder, 1-2 tbs melted coconut oil, pinch of salt, pinch of cinnamon, pinch of cayenne pepper and 4-5 tbs honey (or alternatively agave, rice syrup or maple syrup). Dip the patties into the chocolate sauce and let them set in the freezer for a couple of minutes. And then....Eat up! Cashews may aid in cancer prevention because they contain a large quantity of proanthocyanidins, which are flavanols that stop division of cancer cells and starve tumours. Cashews may also aid in heart health because they contain a lower fat content than other nuts, containing oleic acid which helps to reduce triglyceride levels.
