Sometimes it's a really nice change to have a warm savoury breakfast and these beans were filling and a great way to kick start the day. To start with I heated 2 tbs olive oil in a medium sized saucepan. Then I sautéed 1 finely chopped brown onion, 1/2 finely chopped red capsicum and 2 crushed garlic cloves. When the onion has softened and began to turn transparent, add 1 tin canned crushed tomatoes, 2 400g cans cannellini beans, 1 tsp sweet smoked paprika, 1 tsp ground cumin, 1 tsp dried oregano, 2 tbs tomato paste and salt and pepper. Simmer for 10 minutes, stirring occasionally. This serves about 4. Cannellini beans are a great source of protein; in fact of all plant-derived foods they contain the greatest amount. As well as the protein they also contain a good balance of carbohydrates. They are a low GI food - releasing glucose slow and steady into the bloodstream. As well as this cannellini beans are great for weight loss because they provide a high dose of soluble fibre, reducing your appetite.
