This was a bit of an experiment but it turned out to be a really filling, satisfying and delicious. I made a bowl each for my boyfriend and I and we ate it was a couple of pieces of fresh toasted bread. To make it I sauteed 2 large handfuls of baby spinach with some garlic, olive oil and salt and pepper. Then turn the heat off and stir in about 150g fresh ricotta. Then divide the mixture between two overproof bowls. Crack an egg in each bowl and sprinkle with a small amount of parmesan cheese. Bake in the oven until all the egg white is cooked through.
